Comfort Food Vegan(ish) style

We recently decided to change the way we were eating. We wanted not only to build our personal resilience but we also wanted to be gentler on the earth. The chaos seen everyday in the news leaves me feeling vulnerable and not in control. So I have taken my power and have redirected into making small changes that will have big impacts. Last night my partner and I choose a new recipe that was plant based, and we added a bit of Parmesan cheese we had left over from the holidays. It was hard for my partner to follow the recipe. He is an experimenter by nature letting his nose do the creating. I am a recipe follower and then I will experiment once i know the path I am on. It was challenging for my partner to follow the recipe but in the end he gave him and decided to try it and see how it went. We did augment with a few things as we tasted the mix. That allowed a bit of experimentation within the confines of the recipe. In the end it turned out to be a favorite dish and one we know we will make it again. This dish tops mac and cheese for me. It is much healthier, still has that comfort food feel and uses quinoa which we struggle to find ways to prepare other than salads. Here is the link to the recipe and we merely changed a few things. First we didn't use spinach, we chose to use broccoli. We used the nutritional yeast and followed the instructions for the vegan sauce. We added a few drops of liquid smoke, soy sauce and some powdered mustard. We splurged by topping it with the left over Parmesan cheese from Christmas.
